    Bolay was founded in 2016 in Wellington, Florida, by Chris Gannon and his father, Tim Gannon (cofounder of Outback Steakhouse), with a bold vision: to redefine fast-casual dining through flavorful, nutritious food and an energizing guest experience.

    Inspired by his New Orleans roots and global travels, Chris partnered with world-class chefs—to craft a fully gluten-free, customizable menu built on fresh, nutrient-rich ingredients. From kale and quinoa to bold proteins and vibrant sauces, every bowl is designed to fuel an active lifestyle.

    But Bolay was never just about food.
