The special spring meal consists of two courses, starting with an Oven-Roasted Baby Beet and Whipped Chevre Salad, followed by the main course of Cedar, Orange and Tea-Smoked Filet Mignon with Lemon-Garlic Butter, topped in a Spring Mushroom and Toasted Pine-Nut Ragout and accompanied by Prosciutto-Wrapped Green Beans.
